Lemony Tarragon Peas

These Lemony Tarragon Peas are the perfect addition to a spring menu.  They are quick and easy to make with ingredients that are readily available.  The fresh spring flavors of tarragon and lemon resonate through this delicious side dish.

Begin by crisping bacon pieces and sliced shallots in a skillet.  This will take about 8 minutes.  Add the peas and cook for another 3-4 minutes until they are warmed through.

It’s sometimes hard to find fresh English peas, so frozen peas will do just fine in this recipe.

Stir in tarragon, lemon zest, salt, pepper and Aleppo pepper.  Finally, toss with lemon juice and more tarragon.

Lemony Tarragon Peas

Ingredients

  • 6 ounces sliced bacon, cut crosswise into 1/2-inch pieces
  • 1 large shallot or 1/2 small red onion, thinly sliced
  • 1 pound fresh or thawed frozen English peas (about 3 & 1/4 cups)
  • 1 tbsp finely chopped fresh tarragon; more for serving
  • 1 tsp finely grated lemon zest
  • Kosher salt and freshly ground black pepper
  • Aleppo pepper or crushed red pepper flakes
  • 1 & 1/2 tbsp fresh lemon juice

Instructions

In a large skillet, cook the bacon and shallot over medium heat, stirring occasionally, until the bacon begins to crisp, about 8 minutes.

Add the peas and cook until warmed through, 3 to 4 minutes. Remove from the heat.

Stir in the tarragon, zest, 1/2 teaspoon salt and a generous pinch each of black pepper and Aleppo. Toss with the lemon juice, top with more tarragon, and serve.

      Your timing is always impeccable Fran. I have some peas in the freezer that I was even thinking of throwing out. That’s where the timing, of this peas recipe comes in. I bought some frozen shrimp last week and I was thinking of making something to accompany them. I even have an older Shrimp recipe of yours that I was going to track down today, from your archives to cook the shrimp with as well. I love the tangy taste of lemon.
